    STICKY TOFFEE PUDDING

    List of Ingredients




    3/4 cup chopped pitted dates

    1 teaspoon baking soda

    1 teaspoon vanilla

    1 1/4 cups boiling water

    3/4 cup sugar

    1/4 cup unsalted butter

    1 egg, slightly beaten

    1 cup flour

    1 teaspoon baking powder

    Sauce, recipe follows

    Whipped cream

    Recipe



    Mix the dates, soda, vanilla and boiling water. Set aside.

    Beat the sugar and butter until fluffy. Add the egg.

    Sift the flour and baking powder and add to the butter mixture, beating well.

    Add the dates mixture, beating until smooth. Turn into a buttered 8x6-inch baking dish.

    Bake at 350 for 35-40 minutes; remove to a wire rack.

    Heat the broiler and prepare the Sauce.

    Pour the Sauce over the baked pudding and broil approximately 4- 5 inches from the heat for 2-4 minutes, watching carefully. Serve warm with whipped cream.

    Sauce

    3 tablespoons butter

    5 tablespoons brown sugar

    2 tablespoons cream

    1/2 cup pecans, optional

    Combine the butter, brown sugar and cream. Heat and simmer 3 minutes, until thickened. Stir in the pecans, if desired.
