Gypsy Style Halibut

List of Ingredients
1-1/2 pounds halibut fillets
2 tablespoons olive oil
1 cup white wine OR 1 cup water
1 pound potatoes, thinly sliced
2 large onions, thinly sliced
2 large tomatoes, thinly sliced
2 cloves garlic, minced or pressed
1/4 bunch parsley, finely chopped
1 bay leaf
1/4 teaspoon salt and pepper
Zest of 1/2 lemon
GARNISH
Lemon wedges
Parsley sprigs
Recipe
In casserole dish, layer potatoes, onions, and fish, adding tomatoes
to last layer. Mix together garlic, wine, parsley, bay leaf, olive
oil, salt and pepper. Pour over casserole, adding water if more
liquid is needed. Cover tightly, bake at 325 degrees F for 30-40
minutes, or until cooked. Check for liquid halfway through
cooking time.
