    Alaskan Recipe
    Project Literacy is a superb cook and she is always bringin in stuff for the kitchen. I tasted this and couldn't stop.

    List of Ingredients




    Brine:
    ? C Sugar 1/4 C Salt (non-iodized)
    1 1/4 C Soy Sauce 1 C Water
    1 C Dry white wine (cheap wine) 1/2 tea Onion Powder
    1/3 C Teriyaki Sauce 1/2 tea Pepper
    1/2 tea Garlic Powder 1/2 tea Tabasco Sauce

    Recipe



    Combine all ingredients. Brine fish overnight in refrigerator. Rinse fish off and pat dry with paper towels. Let air dry 2 hours. (Fish will form a shiny glaze). Put fish in smoker for 8-10 hours. Use 3 pans of chips in smoker.
    Note: I used filets and smoked 4 hrs. Also, doesn't hurt fish if you brine longer than overnight.
