Recipe Introduction


Here's my mom's Lemon Pie


List of Ingredients




1 - 9" pie shell (you bake it while preparing the filling)
1 C. sugar
1/3 C. corn starch
1 C. water
2/3 C. milk
4 eggs separated - beat yolks slightly and save whites for meringue
1/2 C. lemon juice
1 Tb. butter or margarine
1 tsp grated lemon peel

Recipe



Combine sugar and cornstarch in 1 quart casserrole. Stir in water and milk.
Cook in microwave for 3-4 minutes. Stir twice during cooking. Mix hot mixture
into slightly beaten egg yolks. Return to microwave and cook 3-4 minutes or
until mixture begins to boil. Stir once during cooking.
Stir in Lemon juice, butter and lemon peel until butter is melted.
Pour filling into pie shells.
Make meringue with egg whites or use whipped cream.Enjoy!!!!!!

It is wonderful. This is so easy that you can make it all within about 10 - 20 minutes, start to finish.
