    Meatloaf is wonderful. I have always like it. There are some tricks though to getting it right. Years ago I searched alot of recipes for something better. Bill Blass the designer posted his recipe in a Dallas Newpaper. It was good. He went to a great deal of trouble though. Then I saw the late great chef James Beard talk about meatloaf. Depending on how big of one you want. Here is the one I have ended up with with all his suggestion.

    List of Ingredients




    2 lbs of ground chuck

    1 sack of saltines crushed well

    1 egg. beaten

    salt, pepper

    1 tab worcheshire sauce

    1 small onion grated fine

    1/2 cup of evaporated milk, undiluted.

    1/4 cup of ketchup.

    Garlic powder to taste

    Recipe



    Mix all in bowl. Shape as desired. KEY::::: Put loaf in baking dish that is twice the size of meatloaf. Place in middle of dish. Smear ketchup over top and top this with thick cut bacon. Bake uncovered in oven for 1 hour, til done. You'll know. Drain all grease from container. This is great because the meat doesn't sit in its own grease while baking. Equaling that it keeps it's shape and taste better Let it cool and slice. NOTE" This is wonderful cold, and on great bread for a sandwich.
