    These are our favorite banana muffins. The light taste of banana with the crunch of delicious macadamia nuts are the perfect combo, all nestled below a sweet streusel topping.

    List of Ingredients




    2 cups flour

    1/2 cup sugar

    1 tbsp. baking powder

    1 tsp. cinnamon

    1/2 tsp. salt

    1 cup milk

    1 egg, beaten

    1/3 cup vegetable oil

    1 cup mashed bananas

    1 tsp. vanilla

    1/2 cup chopped macadamia nuts or almonds

    TOPPING

    1/3 cup sugar

    1/4 cup flour

    1/4 tsp. ground cinnamon

    3 tbsp. butter

    Recipe



    1. Preheat oven to 400º. Grease a 12-cup muffin tin.

    2. Combine flour, sugar, baking powder, cinnamon and salt in a medium bowl; make a well in the center.

    3. Mix milk, egg, vegetable oil, bananas, vanilla and nuts in small bowl. Pour mixture into well. Mix batter until just moistened; do not overmix.

    4. In a small bowl, combine sugar, flour and cinnamon; cut in butter until crumbly.

    5. Spoon batter into prepared muffin cups. Sprinkle topping over muffins. Bake 15 to 17 minutes or until muffins test done. Yield: 1 dozen.
