Maple Muffins with Maple Butter Glaze

Makes 18
Maple Muffins
2 eggs
1 cup sour cream
1 cup maple syrup
1 cup all purpose flour
1 cup bran flakes
1 teaspoon baking soda
¾ cup hazelnuts, coarsely chopped, for those who prefer a different nut, I'm
sure you could substitute your favorite
Maple Butter Glaze
2/3 cup maple syrup
6 tablespoons (3/4 stick) butter
Recipe
For muffins: Preheat oven to 400 degrees. Grease muffin tins. Beat eggs with
fork in large bowl to blend. Stir in sour cream and 1 cup maple syrup. Add
flour, bran flakes and baking soda and stir just until batter is moistened.
Mix in hazelnuts. Fill muffin cups ¾ full. Bake until tester inserted in
centers
comes out clean, 15 minutes.
Meanwhile, for glaze: Combine 2/3 cup maple syrup with butter in small
saucepan over medium heat and stir until mixture is well blended. Remove
muffins from pan. Place 1 teaspoon glaze into bottom of each up. Dip top of
each muffin into glaze, then return muffins to cups upright. Let stand about
15 minutes so bottoms absorb glaze. Serve warm.
