Oatmeal Chocolate Chip Cupcakes (T&T)

These easy-mix cupcakes are very moist and make a great lunchbox treat.
Leftovers freeze beautifully for later use. ("Tried and True")
List of Ingredients
Yield: 12 Cupcakes
1/2 cup quick-cooking oats (dry)
2/3 cup boiling water
1 cup firmly packed brown sugar
1/4 cup melted butter or margarine
1 egg, lightly beaten
2/3 cup + 2 tbsp. flour
1 tbsp. cocoa powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. vanilla
1 (6-oz.) pkg. chocolate chips, divided use
1/3 cup chopped walnuts
Recipe
1. Preheat oven to 350 degrees. In a large bowl, pour boiling water over
oats. Let stand for 10 minutes.
2. Stir in brown sugar and melted butter; mix in egg. Sift together flour,
cocoa powder, baking soda and salt; stir flour mixture into
batter. Stir in vanilla and HALF of the chocolate chips.
3. Divide batter among 12 paper baking cup lined muffin cups. Sprinkle tops
with chopped nuts and remaining chocolate chips.
4. Bake in preheated oven for 18 to 20 minutes, or until a toothpick
inserted in centers of cupcakes comes out clean.
NOTE: If doubling recipe, use 1 3/4 cups flour - just to make the math
easier!!
