Sarah’s Mountain Mist Inn Pumpkin Muffin

Recipe Introduction
Makes generous 1-1/2 dozen or more. I made these several years ago for a bake sale. I remember they were good, moist, and huge.
Oh, by the way, if you make the recipe, be sure you use a food processor or something enclosed to chop the cranberries. I didn't know any better at the time, so I dumped all the cranberries on the chopping board, picked up my knife to chop like always, and the next thing I knew, I was running for my life with little cranberry "bullets" ricochetting all over the kitchen faster than greased lightning.

SARAH’S MOUNTAIN MIST INN PUMPKIN MUFFINS (T&T)
2 lightly beaten eggs
2 cups sugar
1/2 cup oil
1 cup pumpkin
2-1/4 cup flour
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped cranberries
Recipe
Combine eggs, sugar, oil and pumpkin; mix. Combine in separate bowl flour, spice, soda and salt; mix. Make a well in dry ingredients, pour pumpkin mix into well, and stir enough to moisten; stir in cranberries. Spoon into greased muffin tins; bake at 350F for 30 minutes.
