Sugar Free Nonfat Muffins

List of Ingredients
4 sugar bananas or 2 large bananas
1 teaspoon cinnamon
1 teaspoon baking powder
2 cups wholemeal flour
1/2 cup of nonfat blueberry yogurt (or similar)
1/3 - 1/2 cup of skim milk
3 - 4 egg whites
grated coconut
Recipe
Mash bananas. Whisk eggs and add to yogurt; mix. Place flour,
cinnamon, baking powder and together in a large bowl and mix well.
Add milk and yogurt/egg mix and combine well.
Add milk until you can mix all the ingredients together - just
enough to coat the dry ingredients. Spoon into non stick muffin pan
and sprinkle with a tiny amount of coconut.
Bake at 350F for 20 minutes or until golden brown and tests done
with a toothpick.
