Pasta with Chilli and Semi-Dried Tomato

Recipe Introduction
Melissa here from Geelong, Australia! I have two little girls who
love to get in the kitchen with me and "help", and a husband who loves
to try out my new dishes, a lot of them are from this ezine. This is
my second submission, and personally, I would love to see this theme
stick around for a while yet, so I am dusting off the old recipe book
and have dug out a dish that might look very simple, but the end
result is a flavour-packed meal that even my meat-loving husband
loved.
List of Ingredients
2 medium brown onions (300g), chopped coarsely
2 cloves garlic, quartered
1 cup semi-dried tomatoes in oil, drained
1/4 cup tomato paste
2 red Thai chillies, finely chopped
2 cups beef stock
375g pappardelle (or pasta of your choice)
1/4 cup chopped parsley Recipe
Blend or process onion, garlic, tomatoes, paste and chilli until
mixture forms a paste. Heat large non-stick pan. Cook tomato
mixture, stirring, 10 minutes. Stir in stock, bring to the boil.
Reduce heat, simmer sauce uncovered for about 10 minutes, or until
slightly thickened. Cook pasta in large saucepan of boiling water
until just tender, drain. Just before serving, gently toss pasta
through sauce, sprinkle with parsley. Serve with shaved parmesan
cheese.
