Apricot Hazelnut Torte

I just saw an advertisment for the 2002 Taste of Home Annual Recipes Book. On it was a picture of an Apricot Hazelnut Torte that looked heavenly.

List of Ingredients
1 c ground hazelnuts
3/4 c flour
2 tsp baking powder
1/2 tsp salt
4 eggs separated
2 Tbsp water
1 tsp vanilla extract
1 c sugar, divided
2 c whipping cream
1/4 c powdered sugar
2/3 c pureed canned apricots
1/2 c apricot jam, warmed Recipe
oven 350
greased, lined 9" pans
Whipped cream, sliced apircots and whole or choppepd hazelnuts for optional garnish
In a bowl combine the ground hazelnuts, flour, baking powder and salt and set aside. In mixing bowl beat the egg yolks, water and vanilla until lemon colored. Gradually add 3/4 c sugar. Set aside.
In another mixing bowl beat the whites until soft peaks form. Slowly beat in remaining sugar until stiff peaks form.
Stir 1/4th of the dry ingredients into the yolk mixture. Repeat 3x. Fold in the egg white mixture. Divide the batter evenly between the two pans and spread. Bake 20-25 minutes or until the cake springs back when lightly touched. Cool ten minutes before removing from pans to rack to cool.
In a mixing bowl beat the powdered sugar and the whipping cream until stiff peaks form. Fold in the apricots. Split each cake into two layers and spread filling between layers and over the sides. Spread the jam on the very top layer.
Garnish with whipped cream, sliced apricots and hazelnuts if desired. Store in the refrigerator.
