    Recipe Introduction

Rich Davis’ Chinese-Style BBQ Pork Tenderloin

    8 servings
“Slow and medium-low are the secrets to cooking a whole pork loin on the grill. Turn and baste the meat often. Do not let it burn.”

    List of Ingredients

    For the marinade:
    1/2 cup soy sauce
    2-1/2 tablespoons sesame oil
    1-1/2 tablespoons minced garlic
    2 teaspoons fresh lime juice
    2 teaspoons rice-wine vinegar
    1-1/2 teaspoons ground ginger
    1/2 teaspoon sugar

1 pork tenderloin (3 pound), well trimmed
Rich Davis’ Chinese-Style Barbecue Sauce (recipe follows)

    Recipe

    1. Mix all the marinade ingredients together in a small bowl. Place the pork tenderloin in large flat Pyrex dish and pour the marinade over it, turning the meat several times to coat well. Cover with plastic wrap and place in the refrigerator for approximately 3 hours to marinate, turning every hour.
    2. Prepare a grill with medium-hot coals.
    3. Grill the tenderloin, turning occasionally, until cooked through, about 45 minutes to an hour or until the internal temperature of the tenderloin reaches 150F when tested.
    4. Let tenderloin stand at least 10 minutes before slicing. Slice thinly on the diagonal, arranging the slices on a serving platter. Pour the Chinese-Style Barbecue Sauce over the meat and serve immediately. Serve extra sauce on the side.
