    List of Ingredients




    6 thick center-cut pork chops

    4 tablespoons butter

    1 large apple, peeled and cut into small cubes

    2 cups plus 1 tablespoon bread crumbs

    1/2 cup pine nuts (pignoli), chopped

    Salt and pepper to taste

    1 1/4 cups pure maple syrup, divided.

    1 small apple, cut into thin wedges

    1. Preheat oven to 350 degrees. Spray roasting pan with nonstick cooking spray.

    2. Make a pocket in the pork chops (or have the butcher do it) by using a sharp knife to cut horizontally almost to the bone.

    3. In a large nonstick skillet, melt butter. Add apple and saute about 2 minutes. Remove from heat. Add 2 cups of the bread crumbs, chopped pine nuts, salt and pepper, mixing well. Add 3/4 cup of the maple syrup, mixing well.

    4. Stuff pork chops with this mixture. Arrange in roasting pan. Drizzle with remaining syrup. Sprinkle remaining tablespoon of bread crumbs on top. Bake about 60 minutes, basting with pan juices. Garnish with apple wedges.

    Makes 6 servings.
