Sweet & Sour Pork (T & T)

This is tried and true.
I got the basic recipe for this close to ten years ago on CompuServe (that dates me some, I suppose, heheh), and have tweaked and modified it over the years. The original hard copy that I have does not list the author's name, but was posted by a friend of mine who attended a Chinese cooking class. This dish was one of the lessons.
The marinade for the pork makes the meat taste so good. It's almost like candy! I could the cooked pork just by itself. With all that out of the way, here's my version of:
List of Ingredients
1 lb pork, cut into cubes
Marinade
1 Tbsp Oyster Sauce
2 Tbsp Soy
1/4 tsp salt
1 egg, beaten
1 tsp sugar
1 slice minced ginger
1 Tbsp rice vinegar, non seasoned
1 clove garlic, mincedRecipe
Marinate meat 20 minutes or longer. With this particular recipe, I find that the length of time doesn't matter so much, oddly enough.
Mix together 1/2 cup of flour and 1/2 cup of cornstarch. Shake meat in the mixture.
Sauce
1 ketchup (use Heinz, it rules)
2 tsp soy sauce
1 cup pineapple juice
1/2 cup vinegar
1 cup sugar
4 Tbsp cornstarch
4 Tbsp water
2 cans pineapple chunks or tidbits, or even crushed (in juice, not syrup - save the juice for above)
red pepper chunks (most folks use green peppers, but I prefer red ones, as they just taste better to me)
Blend first 5 ingredients in a small saucepan. Add cornstarch and water which have been mixed together. Heat until thickened. Add pineapple and pepper chunks.
Note:
Often times when I make this, I will add only half the vinegar first as part of the 5 ingredients, and the other half last with the pineapple and pepper chunks, so that it is nice and tart. I often also add a dash or six of cayenne pepper. [ ]
Deep fry pork and drain. Put the meat chunks over rice, and the sauce over the meat chunks.
