Recipe Introduction
Elaine here from Toronto, Canada with I think my 3rd submission. I
have 2 goldens, 2 cats and a soon to be new African Grey Parrot (if
anyone has one I would love to hear) - and they all (except "jack" the
parrot who does not live here yet) give hugs Wuffs and Meows to Nell.
I am also wondering if I will get a look at Cheffie when he comes to
Toronto... hmmm... sure hope so! In any event, this is a great
casserole that was made many times by my husband's Mom, who has
passed, and by myself and my family. Great for leftover ham - in many
cases I just go buy a piece - the recipe is delicious. Hope you
enjoy!
List of Ingredients
1/3 cup oil (I use olive oil)
1 cup chopped onion
3/4 cup green pepper
3/4 cup uncooked long grain rice
1 - 28 oz. can tomatoes
2 cups diced ham
1 can pitted ripe olives (drained)
salt, pepper, garlic powder and a bay leaf Recipe
Put all in 2 quart casserole - cover and bake 350 x 1 hour and 15
minutes - stirring occasionally - it's a really good one pot meal!
