Recipe Introduction
Hello this is Darlene from "Sultry Savannah, Ga" which is how we
describe our humidity.
Still happily solo at age 57 with two sons away in college. I love
casseroles but alas many contain things too fattening for me. This
makes a lovely simple side dish. I like to add fresh veggies on top
and eat as a main meal. Because it has no fat in it, it is good cold
too.
List of Ingredients
1/2 cup short grain rice
1/2 cup dried lentils
2 cups of broth
1 Tablespoon of salt (if broth unseasoned)
1 clove of sauteed garlic (optional)
2 Tablespoons sauteed onion (optional) Recipe
Combine all ingredients in an oven safe dish, cover and bake 20-25
minutes (or until liquid is absorbed) at 325 degrees. This can be
prepared on top of stove simmering covered on low for 20 minutes until
liquid is absorbed.
