I made this just before I left for the states last summer. As you may or may not know, Taiwan suffered a severe drought during the spring and early summer which made things aroud here miserable. Your dish was perfect for those murderously muggy evenings I did not feel like working in a hot kitchen.
Your recipe was different, tasty and a welcome change from the more traditonal egg or potato salads. I also liked the special touch the chili cheese Fritos added.
As for the recipe itself, I could not find Mexican style corn here, so I used two 15 oz. cans of regular corn and added about 1 tsp. chili powder and 1/2 tsp. cumin. I also added about 1/2 tsp. garlic powder and the same amount of Tabasco Jalapeno sauce--quite good! Thanks for the recipe!

List of Ingredients
1 can corn
1 can Mexican style corn
1/2 cup red onion-chopped
1/2 cup green pepper-chopped
1/2 cup cheddar cheese (grated (1/2 - 1 cup)
1/2 cup mayonnaise
Chili cheese fritos- crushed (or corn chips) Recipe
Drain cans of corn well. Mix corn, onion, bell pepper, cheese. Add mayonnaise and mix. Just before serving add Fritos and mix.
