    Here is another white sauce recipe, a little more work, and a little spicier.

    List of Ingredients




    3 cups 1% low-fat milk
    2 cups defatted reduced sodium chicken broth
    2 whole garlic cloves, peeled
    1 bay leaf
    1/2 tsp. dried thyme
    6 whole black peppercorns
    2 Tbsps. unsalted butter or margarine
    1/2 cup all purpose flour
    1/4 tsp. salt
    1/4 tsp. freshly ground pepper

    Recipe



    Combine milk, broth, garlic, bay leaf, thyme and peppercorns in heavy pan and bring to boil over high heat, watching carefully so it doesn't boil over. Remove from heat, cover and let stand for 15 minutes to infuse the liquid with the seasonings. Strain into a large measuring cup. Melt butter in heavy pan over medium heat. Sprinkle in flour and cook, stirring constantly for 1 minute, or until flour is completely incorporated and mixture is bubbly. Pour in milk mixture, whisking constantly. The sauce will be very thick. Remove pan from heat, cover and let stand for 2 minutes - this will help to make a smoother sauce.

    Return pan to medium-high heat and bring to boilm, stirring constantly. Use a whisk at first, then switch to a wooden spoon. Reduce heat to medium=low and simmer, stirring frequently, for 8-10 minutes, or until sauce is thickened and smooth. Stir in salt and pepper.
