Peggy S from Columbus, OH - I just sent in a wonderful recipe for
Fried Pies and just as I clicked to return to the recipes, I realized
that we had switched to healthy recipes. Well the Fried Pies are far
from healthy but they do bring me such comfort so if you want a really
good recipe for fried pies, let me know. The recipe is one from Ellen
Pyle in Apple Springs Texas. She and my mother have been friends
since forever and they are both good ole Texas gals.
I quickly sent off an apology to the Chef and with his forgiveness,
here a healthy recipe for Cream of Tomato Soup - sans can. This
recipe is compliments of the Columbus Health Department
List of Ingredients
Yield: 3-4 servings
2 tablespoons onion, chopped
2 tablespoons margarine
2 tablespoons flour
2 cups tomato juice
1/2 teaspoon garlic powder
1/2 teaspoon basil
Salt and pepper to taste
2 cups skim or reduced-fat milk
1 cup diced tomatoes (optional) Recipe
Saute the onion in margarine in a large pan until tender. Remove from
the heat and stir in the flour. Add the tomato juice slowly, blending
the flour-margarine mixture into the juice using a wire whisk or fork.
Whisk until there are no lumps. Add the spices. Bring the soup to a
boil, stirring often. Boil 1 minute. Add the milk and diced
tomatoes. Heat until hot, but not boiling.
