    Without having to bake the potatoes! Ready in about 30 minutes.

    List of Ingredients




    3 T butter
    1-1/2 C thinly sliced onion
    2 T flour
    2 C chicken broth
    1 lb baking potatoes, peeled and cut into 1/2 dice (or leave the skins on, if you want)
    1/2 tsp salt
    1 tsp dried basil
    1/4 tsp fresh ground pepper
    1/4 tsp Tabasco
    1/2 tsp garlic powder ( or 2 cloves fresh pressed garlic)
    1 C lowfat milk (or something richer, if you dare)

    Recipe



    Melt the butter and saute the onions until brown bits begin to appear. Add the garlic and saute a few minutes more. It is okay if a little of the onion gets dark brown, but not the garlic. Add the flour, stir for about 3 minutes to make a roux. Slowly pour in the broth. Add the potatoes and all seasonings. Bring to a boil, reduce heat to low, and simmer gently 20 minutes or until the potatoes are tender. Stir in the milk and simmer 5 minutes. Serve topped with grated cheddar cheese, chopped green onions, sour cream, and bacon bits.
