Tomato Basil Soup

List of Ingredients
2 T. olive oil
1 medium onion chopped fine
2 garlic cloves minced
28 oz. tomato puree canned
1 medium potato diced fine
2 C. tomato juice
2 t. sugar
bay leaf
sea salt
ground white pepper to taste
2 C. milk
1/4 C. fresh basil chopped
2 T. Italian parsley chopped
1 pinch nutmeg
Recipe
In a heavy soup pot, heat the olive oil on medium heat and saute the onion and garlic for 4 to 5 minutes. Add in the canned tomatoes, peeled/diced potato, tomato juice, sugar, bay leaf, sea salt, and white pepper. Stir together and bring to a high simmer. Reduce the heat and simmer for 20 minutes. Slowly stir in the milk, herbs and nutmeg. Gently heat through without boiling.
Note: You can substitute soy milk, whole milk or light cream in any combination for the 2 cups of milk.
