Recipe Introduction
Hello from Toledo, Ohio. I'm a project coordinator for a national
organization located in Bowling Green and also finishing a Master of
Arts in History. My husband of six years, Tony, and I spend a lot of
time fighting with our golden retriever (Bailey) for bed space. After
five years, the results are still undetermined!
This is a recipe from my mom that she took from a cookbook by Martha
Dixon. From what I remember, Mrs. Dixon was a local cooking show
maven in Lansing, Michigan (near where I grew up) about 25-30 years
ago or so. This is my husband's favorite recipe and he makes a
pronouncement of "Stew" in a tone reserved for all that is holy when
he knows I'm cooking it. Although it takes the goodly portion of a
day to make it, it is well worth the effort. I think it could be
great with a salad, fresh rolls and wine, but we just gorge ourselves
on the stew. Tony also likes to freeze single servings for future
stew-less days. I hope you try it and enjoy it as much as we do.
List of Ingredients
Heat 2 tbs fat in a Dutch oven. Add 2 lb beef chunks (cut into 1 1/2
inch cubes), dredge cubes in flour, add to the pot, and brown on all
sides. This should take about 20 minutes. Add:
a big onion, sliced
1 clove garlic
4 cups boiling water
1 tbs salt
1 tbs lemon juice
1 tsp sugar
1 tsp Worcestershire sauce
1/2 tsp pepper
1/2 tsp paprika
a bay leaf or two
Cover and simmer 2 hours (or more), stirring occasionally. When meat
is almost done, add the following vegetables:
carrots
white onion
potatoes Recipe
Simmer the stew until everything is tender. Discard bay leave and
garlic.
For the Gravy: Pour 1/2 cup cold water into a shaker and add 1/4 cup
flour. Shake hard to blend. Remove pan from heat, push meat and
vegetables to one side. Stir in flour mixture. Return pan to heat.
Cook and stir until gravy thickens and boils. Cook gently a few
minutes.
