    You can have the cheese - without the guilt! Add a slice of fat-reduced deli-style chicken or pastrami on top of tomato mixture for even more of a treat. (Company's Coming - The Cheese Book)
    Haven't tried - but it's on my next brunch meal!

    List of Ingredients




    2 T fat free Italian salad dressing
    1 T non-fat mayonnaise (not salad dressing)
    1 garlic clove, minced
    1 T chopped fresh sweet basil (or 3/4 tsp dried)
    1/8 tsp salt
    sprinkle ground pepper
    1 large roma (plum) tomato, seeded and diced (about 2/3 cup)
    1/2 cup grated part-skim mozzarella cheese (about 2 oz)
    1 T grated light Parmesan cheese

    4 Sourdough bread slices, 1/2 inch thick
    1 T olive (or cooking) oil

    Recipe



    Combine first 9 ingredients in small bowl. Makes 1 cup tomato mixture.

    Lightly brush 1 side of bread slices with 1/2 of olive oil. Divide tomato mixture on oiled side of 2 bread slices. Cover with remaining 2 bread slices, oiled side down. Press down slightly. Brush remaining olive oil on outisde of bread slices. Grill in large non-stick frying pan on medium for about 3 minutes per side until bread is toasted and cheese is melted. Makes 2 sandwiches.
