    List of Ingredients




    2 large thin slices ham, grilled (I just heat in a heavy skillet)
    2 Holland rusks (I use a split English muffin)
    1/4 cup Marchand de Vin Sauce (recipe follows)
    2 slices tomato, grilled (I just heat in a heavy skillet)
    2 eggs, soft poached
    1/2 cup Hollandaise Sauce
    Paprika

    Lay a large slice of ham across each rusk and cover with Marchand de Vin
    Sauce. Add a slice of tomato and then the egg. Top with Hollandaise and
    sprinkl with paprika. 1 serving

    Marchand de Vin Sauce

    3/4 cup butter
    1/3 cup finely chopped fresh mushrooms
    1/2 cup minced ham
    1/3 cup finely chopped shallots
    1/2 cup finely chopped onions
    2 tablespoons minced garlic
    2 taplespoons flour
    1/2 tsp. salt (I usually leave this out)
    1/8 tsp. black pepper
    Dash cayenne pepper
    3/4 cup beef stock
    1/2 cup red wine

    Melt butter in a heavy skillet; add mushrooms, ham, shallot, onion, and
    garlic. Saute until lightly browned. Add flour, salt, pepper, and cayenne;
    cook until browned. Blend in beef stock and wine. Simmer over low heat 35 to
    45 minutes. Yield 2 cups.
