    Recipe Introduction


    Here are the recipes I have for Hot Browns. The first is from Southern Living. It is the favorite of my cousin and a dear friend. The second is the one I have used. It is from The Louisville Courier-Journal. I think they are all based on the same recipe. Everyone just tweaks it to suit them.

    List of Ingredients




    8 thick white bread slices
    1 lb. roasted turkey slices
    1 cup shredded Parmesan cheese
    8 bacon slices, cooked
    2 large tomatoes, sliced and halved
    Cheese Sauce:
    1/2 cup butter or margarine
    1/3 cup all-purpose flour
    3 1/2 cups milk
    1/2 cup shredded Parmesan cheese
    1/4 tsp. salt
    1/4 tsp. pepper

    Trim crusts from bread slices and discard crusts. Place bread on a baking sheet and broil, 3 inches from heat, until toasted, turning once.
    Arrange 2 bread slices in each of 4 lightly greased individual baking dishes.
    Top bread evenly with turkey.
    Pour hot Cheese Sauce evenly over turkey and sprinkle with Parmesan cheese.
    Broil 6 inches from heat 4 minutes or until bubbly and lightly browned; remove from oven.
    Top evenly with cooked bacon and tomato. Serve immediately.
    To make Cheese Sauce: Melt butter in 3-quart saucepan over medium-high heat.
    Whisk in flour and cook, whisking constantly, 1 minute.
    Gradually whisk in milk. Bring to a boil and cook, whisking constantly, 1 to 2 minutes or until thickened.
    Whisk in cheese, salt and pepper.
    Remove from heat.

    Louisville Hot Browns

    4 Tablespoons butter
    3 Tablespoons flour
    2 cups milk
    1/2 to 1 teaspoon worcestershire
    1/2 teaspoon salt
    1/4 teaspoon white pepper
    1/4 cup shredded Cheddar
    1/4 cup grated Parmesan
    8 slices trimmed toast
    Slices of cooked or turkey breast
    Crisp-fried bacon

    Melt butter over medium heat.
    Add flour and whisk, cooking for 1-2 minutes. Add milk, salt and pepper, mix until smooth.
    Cook on medium heat until sauce thickens, stirring frequently.
    Add cheeses and continue heating until they blend. Remove from heat.
    Put one slice of toast in each of four oven-proof individual serving dishes.
    Top each piece of toast with slices of turkey. Cut remaining toast slices diagonally and place on sides of sandwiches.
    Ladle cheese sauce over sandwiches.
    Place sandwiches under broiler until sauce begins to bubble and the top colors to your choice. Garnish with bacon, strips or crumbled, and a slice of tomato if desired.
    Serve immediately.
    If you like, you may omit all or some of the Parmesan in the sauce and lightly sprinkle over the top of each serving before placing under the broiler.
