    Recipe Introduction


    Hi -

    This is Kim from Nashville. I am a transplanted Kentuckian here due
    to my husband's job. We both were raised in Louisville, KY and while
    we really like Nashville, Louisville is still home. We met at the
    Kentucky Derby Infield 8 years ago. We have been married 7 years and
    have two great boys - 5 and 21 months. Needless to say, we both feel
    we came out the winners of the day and the Derby holds an even more
    special place in our hearts than for other Louisvillians.

    For those of you who don't know, the Kentucky Derby is a horse race
    that is labeled as the "fastest two minutes in sports". It is also
    part of the Triple Crown of racing (the other two races are the
    Belmont -New York and the Preakness -Maryland) . It takes place at
    Churchill Downs in Louisville the first Sat. of every May. There are
    several dishes/drinks that are "must haves" on Derby Day and it was
    very difficult to decide on which one to choose to submit: the Mint
    Julep - a bourbon drink made with simple syrup, Kentucky Burgoo or the
    Kentucky Hot Brown. I chose The Kentucky Hot Brown because I felt it
    would appeal to most people. It is a stacked, open faced sandwich
    that is very simple to prepare.

    This particular Hot Brown recipe comes from Claudia Sanders, the wife
    of Kentucky Fried Chicken founder, Colonel Sanders. There is a
    Claudia Sanders restaurant in a little town right outside of
    Louisville. I hope everyone enjoys this recipe and thinks of the
    Derby on the first Sat of May.

    List of Ingredients




    This makes 1 serving but is very easy to multiply.

    1 1/2 cups cheese sauce (recipe following)
    1 slice toast
    1 slice turkey
    1 slice country ham (regular ham works fine also)
    2 slices cooked bacon
    1/4 cup grated sharp cheese
    1/4 cup grated parmesan cheese
    Paprika to taste

    Cheese sauce
    2 tablespoons margarine
    2 tablespoons all purpose flour
    1 cup milk
    1 cup shredded cheddar cheese
    1/4 teaspoon salt
    white pepper - to taste

    Recipe



    Melt margarine in saucepan, over low heat. Blend in flour, salt and
    pepper. Add milk slowly, stirring constantly. Put in cheese and cook
    until melted.

    Hot Brown Directions: Preheat oven to 400 degrees. Put 2 tablespoons
    cheese sauce on bottom of baking dish. Place toast on sauce and cover
    with 3 tablespoons of sauce. Put on ham, cover with 3 tablespoons of
    sauce, spoon 1/2 of parmesan cheese then put turkey on. Cover with 3
    tablespoons of sauce, top with tomatoes. Sprinkle sharp cheese on and
    top with bacon and finally rest of parmesan and garnish with paprika.
    Bake 15 minutes.
