Alaskan Salmon Shore Dinner

Recipe Introduction
“The charm of this recipe is its versatility: The salmon can be cooked over a campfire or on a backyard barbecue. Fresh corn on the cob and a baked potato are perfect accompaniments.”
List of Ingredients
4 pounds unskinned salmon fillets cut into 8 portions
1 medium white onion, thinly sliced
1 lemon, thinly sliced
1 apple, cored and thinly sliced
8 teaspoons butter or margarine, optional
Seasoned salt and black pepper to taste
Garlic powder to taste Recipe
Prepare hot charcoal or wood fire, or preheat gas grill. Rinse salmon under cold running water and pat dry. Cut eight pieces of aluminum foil large enough to wrap and seal salmon portions; place portion of fish in center of each piece of foil; top each piece with 1/8 of onion, lemon and apple slices, and 1 teaspoon butter or margarine if used. Season lightly with salt, pepper and garlic powder. Close and seal foil packets; place on grill 4 inches above medium heat. Cook until fish is opaque and flakes easily (open one packet to check), 10-14 minutes per inch of thickness. Serve with Low-Bush Cranberry Sauce.

LOW-BUSH CRANBERRY SAUCE
Makes about one cup

“Hitchcock uses indigenous Alaskan berries he gathers while his clients fish; this recipe substitutes whole cranberries. This sauce is equally delicious with game.”
1 cup rinsed and culled fresh or frozen cranberries any remaining stems removed
1/2 cup packed light brown sugar
1 tablespoon water
1/2 teaspoon vanilla extract
In medium saucepan combine cranberries, brown sugar and water. Simmer over medium heat, stirring until berry skins pop, 8-10 minutes. Skim off foam. Remove from heat. (To microwave: Put cranberries, brown sugar and water in 4-cup glass measure; microwave at 100 percent power 4 minutes.) Stir in vanilla. Serve warm or cold.
