    Recipe Introduction


    Makes 8 servings.
    “The marinated salmon fillets are also delicious baked or grilled.”

    List of Ingredients




    1/3 cup balsamic vinegar
    1/3 cup catsup
    1/3 cup light brown sugar, packed
    1 tablespoon minced or grated gingerroot
    1 tablespoon minced fresh parsley OR 1 teaspoon dry parsley
    3 cloves garlic, minced
    Salt and freshly ground black pepper to taste
    4 pounds unskinned salmon fillets, rinsed, patted dry and divided into 8 portions

    Recipe



    Combine all ingredients except salmon in bowl; mix well. Place salmon and marinade in glass pan or sealable plastic bag; turn so marinade covers each piece of fish. Cover; refrigerate 3 hours. Barbecue in foil packets as described in Jim Hitchcock’s Alaskan Salmon Shore Dinner. To broil, place skin-side down on broiler pan; broil 4 inches from heat 10-12 minutes or until fish flakes easily.
