(Sweet) Green Tomato Bread

List of Ingredients
3 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
2 cups sugar
1 tablespoon ground cinnamon
2 large eggs, lightly beaten
1 cup vegetable oil
1 teaspoon vanilla extract
2 cups finely chopped green tomatoes (about 2 medium tomatoes)
1 1/2 cups chopped pecans Recipe
Preheat the oven to 350 degrees. Grease and flour 2 (8 1/2 x 4 1/2-inch) loaf pans; set aside.
In a large bowl, combine the flour, baking powder, baking soda, salt, sugar and cinnamon, then make a well in the center of the mixture. In a separate bowl, whisk together the eggs, oil and vanilla. Pour the wet ingredients into the well in the dry ingredients, then stir just until the dry ingredients are moistened. Fold in the tomatoes and pecans, taking care not to overstir.
Spoon the batter into the prepared loaf pans. Bake in the preheated oven (350 degrees) for 1 hour or until a wooden pick inserted in the center of the loaves comes out clean. Cool loaves in the pans on a wire rack for 10 minutes, then remove the loaves from the pans and cool completely.
Yield: 2 ((8 1/2x4 1/2-inch) Loaves
