    Recipe Introduction


    Here is the recipe I use. My coconut cream pies I think are truly very good. I make a vanilla puddiing from scratch, but the secret ingredient is I replace the milk with unsweetened coconut milk. It is used in oriental recipes. Most grocery stores carry it. And it makes this pie just wonderful. I am not a meringue person so I use cool whip or freshly whipped cream on the top. Try this little suggestion for your pie. And I always use Baker's coconut. You get what you pay for in food.

    List of Ingredients




    1 Baked Pie Crust, cooled.
    3 eggs
    1 can of evaporated milk { unsweetened coconut milk}
    5 tab of cornstarch
    1 cup of sugar
    2 tsp. vanilla
    3 tab butter
    Add 1 cup of grated coconut ( baker's) when finished.

    Recipe



    Mix all and whisk together and cook over med. heat til comes to a small boil and reduce heat fast. Add vanilla and coconut. Be sure and use a nonstick pan and do not let it burn. Bring it to a boil over med. to high heat. Cool well then add to the baked cool crust. Top with whipped cream. Refrigerate
