    Bacon Cheese Muffins

    Recipe Introduction


    We don't generally use bacon that much at our
    house, but these two savories both use it-you'll
    need a total of 12-13 pieces. If there are leftovers
    they freeze well in a freezer bag to save for the
    next recipe that uses a small amount for flavor.

    List of Ingredients




    2 cups flour
    3 tsp baking powder
    1/2 tsp. salt
    1 egg, lightly beaten
    1 cup milk
    1/4 cup oil
    2 Tbsp. minced fresh chives
    3/4 cup cheese, grated
    6 slices bacon, cooked and crumbled

    Recipe



    Place all dry ingredients in a large mixing bowl. Add
    egg, milk, oil and mix until almost combined. Stir in
    bacon, cheese and chives until all ingredients are just
    wet. Spray muffin tins with cooking spray and fill 3/4 full.
    Bake at 350 degrees for 25 minutes.
