Here's a lovely, rich orange-flavoured butter cake.
List of Ingredients
175g butter
170g castor sugar
1 tsp vanilla essence
3 large eggs
1 tsp grated orange rind
210g self-raising flour, sifted
2 tbsp fresh orange juice Recipe
Grease and line a 20cm round cake tin with parchment paper. Preheat oven to 160°C.
Cream butter, sugar and essence until light fluffy. Beat in eggs one at a time, beating well after each addition. Add orange rind. Fold in sifted flour, then alternate by adding in orange juice and mix well after each addition.
Turn out mixture into the prepared tin. Smooth the top of the mixture with a spatula. Bake in preheated oven for 1 1/2 hours or until a wooden skewer comes out clean when inserted into the centre of the cake. Leave cake in the tin for 4 to 5 minutes before turning out to cool on a wire rack.
