Recipe Introduction
Hi! This is Susan from cold/warm/cold Michigan with my very first
submission. Healthy fare is usually not my taste but this one
qualifies and will make you feel like a gourmet chef. This is the
salad dressing I make almost every night for our small family. It
started as a gift from my 90 year old grandmother-in-law; I've added
the missing element - GARLIC! It's now everyone's favorite. It's
best over a simple salad of romaine lettuce, chopped onion,
hard-boiled egg and shaved parmesan cheese. I make it directly in the
wooden bowl from which I serve the salad.

Approx ingredients:
1 clove garlic
1tbsp salt
1tbsp dry mustard
1+tsp black or white pepper (your taste)
2 tbs salad vinegar
4 tbs (or twice the amount of vinegar) olive
oil (low fat is fine). Recipe
Peel the garlic and chop into small pieces in the bowl. Add the salt
and ground the two together until it's almost a paste. I use the back
of a flat wooden spoon. (Add as much salt as you like, this makes it
taste smoother.) Add the mustard and pepper and continue to grind all
together. The garlic should be completely covered by the spices. Add
the vinegar and mix with spices. (You may have to experiment with the
amount of vinegar and oil). Once the spices are completely mixed with
the vinegar, add the oil and mix. Try a little at a time until it
looks right. I keep pieces of lettuce handy to "test" the dressing as
I add the oil/vinegar. Add the salad ingredients on top of the
dressing and mix all together with the same wooden spoon.
