Potato Spinach Casserole

Recipe Introduction
Here's a favorite potato dish at our house that I thought might be
of interest to you, Pat, for your upcoming "green" party! It's one dish
including spinach that everyone in my family, even the avowed
spinach detesters LIKE!!
List of Ingredients
6 - 8 large potatoes, peeled, cooked and mashed
1 cup sour cream (may use lowfat)
2 teaspoons salt
1/8 teaspoon pepper
2 tablespoons finely sliced green onions, including green tops
4 tablespoons butter or margarine
1 10-ounce package frozen chopped spinach, thawed and well drained

Enough milk to moisten sufficiently
1 cup shredded Cheddar cheese (may use reduced fat)
Recipe
Preheat oven to 350 degrees. Grease a shallow 2-quart baking dish.
In a large bowl, combine all ingredients, except cheese. Spoon
mixture into baking dish. Bake, uncovered, in preheated oven for 30
minutes or until steaming hot throughout. Remove from oven;
sprinkle with cheese. Return to oven for additional 5 minutes, or
until cheese is melted.
Note: An equal amount of frozen chopped broccoli or French-cut
green beans, thawed, may be substituted for the spinach.
