I make roasted garlic mashed potatoes all the time. It's the only way my husband will eat them now.

Just roast the garlic in the oven
(make a tin foil "envelope" with unpeeled garlic cloves, olive oil, salt and pepper) for 40 minutes at 400 degrees.Recipe
While the garlic is roasting, peel, cut up and boil potatoes. Then when they are both done, blend together potatoes, garlic, whipping cream or half and half, salt, white pepper. Sometimes I also put parsley, black pepper, cayenne pepper or paprika for coloring. They are sooooooo yummy.
