    Recipe Introduction


    Company loves this! This is great for brunch or a luncheon when served with fresh fruits and MY banana bread! Great for dinner too when served with a simple green salad.


    List of Ingredients


    • 3C shredded potatoes /or "Simply Potatoes" in refrigerator section
    • 3/4 C Montery Jack cheese w/ jalapenos, shredded
    • 1 C fully cooked ham, diced
    • 1/4 C green onion, sliced w/ tops
    • 4 large eggs, slightly beaten
    • 1 1/2 C 2% or whole milk
    • 1/4 t ground pepper
    • 1/8 t salt (opt)


    Instructions


    1. Preheat oven to 350°
    2. Spray round casserole or pie plate with nonstick spray
    3. Arrange potatoes evenly in the bottom of the casserole
    4. Sprinkle with cheese, green onions & ham
    5. Combine eggs, milk, salt and pepper over potato mixture
    6. Bake uncovered for 40-45 minutes until center is set and inserted knife comes out clean.
    7. Let rest for 5 minutes before slicing.
