Farmer's Casserole

Recipe Introduction
Company loves this! This is great for brunch or a luncheon when served with fresh fruits and MY banana bread! Great for dinner too when served with a simple green salad.
List of Ingredients
- 3C shredded potatoes /or "Simply Potatoes" in refrigerator section
- 3/4 C Montery Jack cheese w/ jalapenos, shredded
- 1 C fully cooked ham, diced
- 1/4 C green onion, sliced w/ tops
- 4 large eggs, slightly beaten
- 1 1/2 C 2% or whole milk
- 1/4 t ground pepper
- 1/8 t salt (opt)
Instructions
- Preheat oven to 350°
- Spray round casserole or pie plate with nonstick spray
- Arrange potatoes evenly in the bottom of the casserole
- Sprinkle with cheese, green onions & ham
- Combine eggs, milk, salt and pepper over potato mixture
- Bake uncovered for 40-45 minutes until center is set and inserted knife comes out clean.
- Let rest for 5 minutes before slicing.
