    Amazingly GOOD!

    List of Ingredients




    * 2 C flour (OR Cake flour 2C + 4T)
    * 2 C sugar
    * 2 t baking soda
    * 1 t salt
    * 4 eggs, slightly beaten
    * 1 1/2 t cinnamon
    * 1 1/4 C canola oil
    * 2 (6oz.) large jars strained carrots / jr. baby food

    * Frosting
    (enough for top half of bundt cake)
    * 2 T each: butter & cream cheese
    * splash OJ
    * milk (any) _ enough to achieve desired consistency
    * powdered sugar - enough to achieve desired consistency
    * 1/2 teaspoon orange zest for deco


    Recipe




    Instructions

    1. Preheat oven to 350°

    2. Combine flour, salt, sugar, carrots, cinnamon, oil.
    Add eggs slowly and blend thoroughly.

    3. Spray w/ nonstick and lightly flour a deep sided cookie sheet or jelly roll pan.

    4. Bake for 30-40 minutes until center is done.

    5. Cool completely. Frost with cream cheese frosting. Slice into squares and serve

    6. *Bundt pan: approx. 55 - 60 mins., check center for doneness with wooden skewer

    7. Frosting Cream together: butter, cream cheese, OJ, milk

    8. Add enough powdered sugar to get desired consistency
