    Chicken with Tomato Rosemary Sauce

    College Inn (broth)

    List of Ingredients


    • 1-2 boneless, skinless chicekn breast halves
    • 1 T EVOO
    • 1 T butter
    • 1/2 C dry white wine
    • (1) 14.5 oz. can College Inn Chicken Broth
    • 1/2 C canned dices tomatoes (or 1/2 can)
    • 1/2 t sugar
    • 1 t fresh or 1/2 t dried rosemary
    • 1/2 C heavy cream or half & half
    • 1 green onion sliced w/ tender green part


    Instructions


    1. Preheat oven to 350°Melt butter and heat w/ EVOO in a skillet.

    2. Sautee chicken breast halves on both sides until browned, set aside in a baking dish, cover with foil and place in oven to continue cooking until chicken is no longer pink

    3. In the mean time,Add white wine to skillet and reduce by half

    4. Add broth, tomatoes, rosemary. Bring to a boil then simmer and reduce the liquid by half. May take 10 minutes or longer.

    5. Add cream/ half & half and reduce until desired thickness. This may take an additional 10 minutes or longer.

    6. Serve over chicken breasts w/ buttered noodles.
