Chicken with Tomato Rosemary Sauce

List of Ingredients
- 1-2 boneless, skinless chicekn breast halves
- 1 T EVOO
- 1 T butter
- 1/2 C dry white wine
- (1) 14.5 oz. can College Inn Chicken Broth
- 1/2 C canned dices tomatoes (or 1/2 can)
- 1/2 t sugar
- 1 t fresh or 1/2 t dried rosemary
- 1/2 C heavy cream or half & half
- 1 green onion sliced w/ tender green part
Instructions
- Preheat oven to 350°Melt butter and heat w/ EVOO in a skillet.
- Sautee chicken breast halves on both sides until browned, set aside in a baking dish, cover with foil and place in oven to continue cooking until chicken is no longer pink
- In the mean time,Add white wine to skillet and reduce by half
- Add broth, tomatoes, rosemary. Bring to a boil then simmer and reduce the liquid by half. May take 10 minutes or longer.
- Add cream/ half & half and reduce until desired thickness. This may take an additional 10 minutes or longer.
- Serve over chicken breasts w/ buttered noodles.
