    Recipe Introduction


    I have made this for bridal / baby showers and the women love it. I serve it on a croissant with fancy lettuce. It can also be served on a bed of fancy lettuce greens topped with crispy Chinese style noodles w/ fresh fruit.

    It seems to me that this made at least 50 sandwiches. When I make it just for the family I wing the amounts (approx. 1/2 chix breast per person). I prepare it the night before so the flavors blend together.


    List of Ingredients




    Colleen's Chicken Salad

    18# chicken, on bone, boiled, cooled & shredded/cubed
    2 2/3 C Hellman's Mayo (can use light)
    1 C half & half
    2 small to medium size onions, minced
    1/2 teaspoon white pepper, more or less to taste
    4 C celery, thinly sliced
    several teaspoons - Beau Monde seasoning > *added to the mayo
    *I add enough to see color in the mayo.
    Iceberg lettuce (opt)

    Recipe



    Combine all of the above ingredients. cover & refrigerate overnight.

    Next Morning
    Taste test for additional Beau Monde
    Add more half & half or milk to thin if desired.

    (OPT) Finely shred iceberg lettuce and add to the chicken mixture. This stretches the chicken salad and makes it lighter in texture.

    Serve on mini/regular croissaint rolls or a bed of fancy lettuce greens.
