    Cranberry Chicken w/ Sweet Potatoes

    List of Ingredients


    • 1 # sweet potato, peeled and sliced very thin
    • 4 skinless chicken breasts
    • 1 16oz. can whole cranberry sauce
    • 1/4 C olive oil, enough to coat potatoes & some for mixture
    • 1/2 t ground ginger (*I use more)
    • 1/2 t salt
    • 1/4 t white or black pepper
    • 1/2 - 1 envelope dry onion soup mix


    Instructions


    1. Preheat oven to 350°

    2. Peel potato and very slice thinly.Place evenly in a 9x13 baking dish (use non-stick spray)*Can be "roasted" prior to layering to carmelize. Drizzle with EVOO.

    3. Place chicken breasts on top of potatoes.

    4. Combine all other ingredients and pour over chicken.

    5. Bake uncovered for 50-60 minutes until chicken is done and potatoes tender.

    6. VARIATIONS: Add 1/2 - 1 envelope dry onion soup mix

    7. Roast sliced potatoes (drizzled with EVOO) prior to layering. Roast until carmelized.
