Cranberry Chicken w/ Sweet Potatoes

List of Ingredients
- 1 # sweet potato, peeled and sliced very thin
- 4 skinless chicken breasts
- 1 16oz. can whole cranberry sauce
- 1/4 C olive oil, enough to coat potatoes & some for mixture
- 1/2 t ground ginger (*I use more)
- 1/2 t salt
- 1/4 t white or black pepper
- 1/2 - 1 envelope dry onion soup mix
Instructions
- Preheat oven to 350°
- Peel potato and very slice thinly.Place evenly in a 9x13 baking dish (use non-stick spray)*Can be "roasted" prior to layering to carmelize. Drizzle with EVOO.
- Place chicken breasts on top of potatoes.
- Combine all other ingredients and pour over chicken.
- Bake uncovered for 50-60 minutes until chicken is done and potatoes tender.
- VARIATIONS: Add 1/2 - 1 envelope dry onion soup mix
- Roast sliced potatoes (drizzled with EVOO) prior to layering. Roast until carmelized.
