Chicken and Spinach Manicotti

List of Ingredients
1 1/2 cups shredded cooked chicken, sautee in EVOO (or more)
1 container (15 ounces) ricotta cheese
1 package (10 ounces) frozen chopped spinach, cooked
according to package directions and well drained
1 1/4 cups half and half, divided
1/2 cup plain bread crumbs
1 teaspoon garlic powder or 2 crushed garlic cloves
1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 package (8 ounces; 14 count) manicotti noodles, or jumbo shells cooked and drained
1 jar (14 ounces) marinara sauce (*may want extra with serving)
1 1/2 cups (6 ounces) shredded mozzarella cheese *can use less
**RECIPE CAN EASILY BE HALVED!
Recipe
1. Preheat oven to 350.
2. In large bowl, combine chicken, ricotta cheese, spinach, 1/2 cup half and half, bread crumbs, garlic, basil, oregano, salt and black pepper; mix well.
3. Stuff chicken mixture into manicotti; place in 13x9-inch baking dish.
4. Combine marinara sauce and remaining 3/4 cup half and half; pour over
manicotti. Top with mozarella cheese.
5. Bake 30 minutes or until thoroughly heated.
Makes 7 servings
