    BLT Macaroni Salad

    Great for dinner on a hot summer night.
    OPT: Serve over a bed of chopped iceberg lettuce.

    List of Ingredients




    2 C uncooked elbow macaroni or small shells
    5 scallions, tops & greens, sliced
    1 large tomato, seeded & diced
    1 1/4 C diced / sliced celery
    1 C Hellmann's Lite Mayonnaise
    5 teaspoons +/- white vinegar *more or less
    1/4 teaspoon sea salt
    1/8 - 1/4 teaspoon pepper
    1# cooked bacon, drained & chopped



    Recipe



    Cook macaroni according to package direction; drain, rinse & cool with cold water.
    In a large bowl combine scallions, tomato, pasta, clery.
    Combine: mayo, vinegar, salt, pepper
    Pour over macaroni, toss to coat.
    Cover and chill for at least 2 hours before serving.
    Add bacon before serving.
