List of Ingredients
8 oz tricolor corkscrew pasta
Newman's Own Light Balsamic Vinigrette
1/4 C parmesan cheese
1/4 C green or black olives, sliced
4 green onions, sliced with tops
2 stalks celery, sliced thin
2 carrots, peeled ans sliced thin
1 medium cucumber, peeled, seeded, quartered,
sliced
1/2 each: yellow & red sweet bell peppers
chunks of cheese, ham, salami or pepperoni
1 small jar marinated artichokes hearts
broccoli, cauliflower florets
fresh basil
cherry or grape tomatoes, halved and seeded
black pepper to taste
**Many ingredient amounts are approximate, add more or less to taste. Think color, the more colorful you make it the yummier it will be.
Recipe
Prepare pasta according to pkg. directions. Rinse with cold water to stop the cooking, set aside and refrigerate in zip lock or bowl with a tight lid. Allow to cool. In the mean time.
Prepare all veggies and cut into bite size pieces. Put in a bowl and drizzle with vinaigrette dressing to coat. Coat cold pasta with dressing.
Combine veggies and pasta. Refrigerate for at least on hour. Drizzle with more dressing if desired.
Serve as a side dish or over fancy lettuce leaves for more of a meal.
