Joy's Pasta with Chicken & Broccoli

Recipe Introduction
I have been making this for years and love it. Great for company and chicken can be omitted to make it a vegetarian meal.

List of Ingredients
- 1/4 C EV OliveOil
- 2+ cloves garlic, minced
- 1/2# boneless, skinless chicken breasts cut into strips
- 1 1/2 C broccoli florets (*1C)
- *4 green onions, trimmed, tops and all
- 3/4 C sun dried tomatoes in oil, drained and sliced thin
- 1 t dried basil leaves
- pinch red pepper flakes, crushed
- salt & pepper to taste
- 1/4+ C dry white wine
- 3/4+ chicken broth
- 1 T butter
- 1/2 - 2 C cooked bow tie pasta - cooked to package directions, drained
- *I add: fresh sliced mushrooms, toasted pine nuts, sliced black olives
- Parmesan cheese at serving
Instructions
- In a large skillet, heat oil and add chicken. Cook until no longer pink.
- Add brocolli and sautee until crispy tender. Add *mushrooms, *black olives, *pine nuts, sun dried tomatoes, red pepper flakes, *green onions, salt and pepper.
- Add wine, broth and butter. Cook for 3-5 minutes or until heated through. Stir occasionally.
- Toss in cooked pasta and combine with veggies.
Top with parmesan cheese.
- Makes 4-6 generous servings.
