Pasta with Sausage

List of Ingredients
- 3 T EVOO (Olive Oil)
- 1/2 C red wine
- 1# hot Italian sausage, casing removed (*can use mild)
- 2 C onions, diced
- 1 sweet red bell pepper, chopped
- 1 14oz. can diced tomatoes
- 1 1/4 C chicken stock / broth
- 1 8oz. can sauce)
- 1 T garlic, minced
- 1 T fresh Rosemary / 1 t dried
- 8 -12 oz. Penne
- 1 1/2 C fresh grated Parm/Reggiano
- 1/4 C Italian flat leaf parsley, chopped
Instructions
- Boil large pot of water for pasta. Cook pasta according to package directions.
- Heat the oil in a heavy skillet over medium, add sausage. Sautee until no longer pink. Remove with a slotted spoon and transfer to a bowl.
- Add wine to skillet and boil reducing to 2T, scrapping up the browned bits.
- Pour wine over sausage.
- Add onions and bell pepper to the skillet. cook until crispy tender. Break up sausage into bite size pieces.
- Mix in tomatoes with juices, tomato sauce, stock, garlic and rosemary. Simmer until reduced to saucy consistency, about 10 minutes.
- Add above to pasta and toss. Add 1/2 - 1 C cheese, toss to combine. Add parsley right before serving.
- Serve with additional cheese at table.
