Asian Chicken Salad

List of Ingredients
- 1 chicken breast, cooked / poached
- 2 carrots, peeled and julienned
- 1 Gala apple w/peels, cut into strips.
- 1/2 each: red & yellow sweet bell pepper, cut into strips
- 1/2 head romaine lettuce (can substitute iceberg in a pinch)
- 1/4 C peanut oil
- 2 T rice wine vineagr
- 1 T low sodium soy sauce
- 2 t light brown sugar
- 1 t each: minced ginger root, red curry paste, more or less to taste.
- 3 T peanut butter
- TOPPING:
- 1/2 C canned fried chow mein noodles
- 1/4 C dry roasted peanuts
- 1 green onion, diced with tops
Instructions
- Poach chicken until no longer pink, cool and shred. Set aside.
- Combine carrots, apples, bell peppers and lettuce in a large bowl,set aside.
- Dressing: Combine & whisk together until smooth: peanut oil, peanut butter, vinegar, soy sauce, brown sugar, ginger, curry paste
- Befreo serving lightly dress salad until evenly coated. Served unused dressing at the table.
- Serve up on plates, sprinkle with crushed peanuts, green onions and chow mein noodles.
- NOTES: Makes 2 generous servings and is a great light meal in itself.
Can be used as a side salad if you omit chicken.
