    List of Ingredients


    • 1 chicken breast, cooked / poached
    • 2 carrots, peeled and julienned
    • 1 Gala apple w/peels, cut into strips.
    • 1/2 each: red & yellow sweet bell pepper, cut into strips
    • 1/2 head romaine lettuce (can substitute iceberg in a pinch)
    • 1/4 C peanut oil
    • 2 T rice wine vineagr
    • 1 T low sodium soy sauce
    • 2 t light brown sugar
    • 1 t each: minced ginger root, red curry paste, more or less to taste.
    • 3 T peanut butter
    • TOPPING:
    • 1/2 C canned fried chow mein noodles
    • 1/4 C dry roasted peanuts
    • 1 green onion, diced with tops


    Instructions


    1. Poach chicken until no longer pink, cool and shred. Set aside.
    2. Combine carrots, apples, bell peppers and lettuce in a large bowl,set aside.
    3. Dressing: Combine & whisk together until smooth: peanut oil, peanut butter, vinegar, soy sauce, brown sugar, ginger, curry paste
    4. Befreo serving lightly dress salad until evenly coated. Served unused dressing at the table.
    5. Serve up on plates, sprinkle with crushed peanuts, green onions and chow mein noodles.
    6. NOTES: Makes 2 generous servings and is a great light meal in itself.
      Can be used as a side salad if you omit chicken.
