    List of Ingredients


    • 1 medium onion, chopped
    • 2 cloves garlic, crushed & minced
    • 3 T Olive Oil
    • 2# stew meat cut into 1" cubes
    • 1/2 C dry red wine
    • 2 T red wine vinegar
    • 1/2 t salt
    • 1/4 t coursely ground black pepper
    • 1 bay leaf
    • 1 cinnamon stick
    • 1 12oz. can diced tomatoes (or 6 fresh whole, diced w/ juices)
    • 1 1/2# pearl onions, peeled and left whole
    • feta cheese, crumbled


    Instructions


    1. Heat olive oil in a Dutch oven over med-high heat. Add onions and garlic, cook until tender; careful not to burn garlic. Remove with a slotted spoon and set aside.
    2. Cook beef in remaing oil, stirring frequently until browned. Add more oil as needed. Continue cooking for approx. 25 minutes.
    3. Return onions and garlic to pan. Add remaining ingredients to pan EXCEPT pearl onions and cheese.
    4. Heat to boil; reduce heat. Cover and simmer for 75 minutes.
    5. Add onions. Cover and simmer for about 30 more minutes until beef and onions are tender. Remove bay leaf and cinnamon stick.
    6. Garnish with cheese and serve.
