Beef & Onions Stew / "Stifado"

List of Ingredients
- 1 medium onion, chopped
- 2 cloves garlic, crushed & minced
- 3 T Olive Oil
- 2# stew meat cut into 1" cubes
- 1/2 C dry red wine
- 2 T red wine vinegar
- 1/2 t salt
- 1/4 t coursely ground black pepper
- 1 bay leaf
- 1 cinnamon stick
- 1 12oz. can diced tomatoes (or 6 fresh whole, diced w/ juices)
- 1 1/2# pearl onions, peeled and left whole
- feta cheese, crumbled
Instructions
- Heat olive oil in a Dutch oven over med-high heat. Add onions and garlic, cook until tender; careful not to burn garlic. Remove with a slotted spoon and set aside.
- Cook beef in remaing oil, stirring frequently until browned. Add more oil as needed. Continue cooking for approx. 25 minutes.
- Return onions and garlic to pan. Add remaining ingredients to pan EXCEPT pearl onions and cheese.
- Heat to boil; reduce heat. Cover and simmer for 75 minutes.
- Add onions. Cover and simmer for about 30 more minutes until beef and onions are tender. Remove bay leaf and cinnamon stick.
- Garnish with cheese and serve.
