Minestrone Soup

List of Ingredients
- 3 slices bacon, cooked & chopped (sliced before cooking)
- 1 C onion, chopped
- 1/2 C celery, sliced
- 2 cloves garlic, minced
- 1 t dried basil
- 1 14oz. can beef broth (can use beef soup base or boullion + water)
- 1 can Campbell's bean with bacon soup, undiluted
- 2 soup cans water
- 1 14oz can diced tomatoes w/ juices
- 1 C green cabbage - chopped
- 1 C zucchini, cubed
- 1/2 medium red onion
- 1 C uncooked Ditalini pasta OR elbow macaroni - cooked to pkg. directions *DO NOT add to the soup.
- Parmesan-Regiano, freshly grated at serving
Instructions
- Cook bacon until done. Remove bacon from drippings and drain on a paper towel to remove excess grease. Reserve 2 T bacon grease.
- In 2 T bacon grease, sautee onions and celery until crispy tender
- Add garlic, basil, broth, soup, water, tomatoes, cabbage, zucchini.Simmer for at least 60 minutes.
- Before serving: cook the macaroni following package directions
- Ladle soup over cooked macaroni, top with grated Parm-Regiano cheese
