    Minestrone Soup

    List of Ingredients


    • 3 slices bacon, cooked & chopped (sliced before cooking)
    • 1 C onion, chopped
    • 1/2 C celery, sliced
    • 2 cloves garlic, minced
    • 1 t dried basil
    • 1 14oz. can beef broth (can use beef soup base or boullion + water)
    • 1 can Campbell's bean with bacon soup, undiluted
    • 2 soup cans water
    • 1 14oz can diced tomatoes w/ juices
    • 1 C green cabbage - chopped
    • 1 C zucchini, cubed
    • 1/2 medium red onion
    • 1 C uncooked Ditalini pasta OR elbow macaroni - cooked to pkg. directions *DO NOT add to the soup.
    • Parmesan-Regiano, freshly grated at serving


    Instructions


    1. Cook bacon until done. Remove bacon from drippings and drain on a paper towel to remove excess grease. Reserve 2 T bacon grease.

    2. In 2 T bacon grease, sautee onions and celery until crispy tender

    3. Add garlic, basil, broth, soup, water, tomatoes, cabbage, zucchini.Simmer for at least 60 minutes.

    4. Before serving: cook the macaroni following package directions

    5. Ladle soup over cooked macaroni, top with grated Parm-Regiano cheese
