    List of Ingredients


    • 1 large onion, chopped
    • 1 boneless, skinless chicken breast, cubed (*or Purdue shortcuts chix strips)
    • 1 pkg. Chi Chi Fiesta taco seasoning
    • 2 cups frozen corn niblets
    • 1 15oz. can chicken broth
    • 1 15oz. can black beans *DO NOT DRAIN
    • 1 15oz. can white beans *DO NOT DRAIN
    • 1 can fat free refried beans (spicy or plain)
    • 1 can diced Mexican style tomatoes w/ juice (ie. Rotel)
    • 1 can diced tomatoes w/ juice
    • 1 t cumin


    Instructions



    1. Spray medium size deep soup pot with non-stick spray

    2. Sautee onions until clear and softened.
    3. Add chicken breast and sautee until no longer pink. Add cumin.
    4. Start opening cans: begin with the broth, beans, refried beans, and add all other ingredients.
    5. Bring to a boilo then simmer for at least 40 minutes. Longer is fine. Add extra chicken broth if soup becomes too thick.
    6. Serve with warm soft (torn) tortillas or crispy tortilla chips.
