List of Ingredients
- 1 large onion, chopped
- 1 boneless, skinless chicken breast, cubed (*or Purdue shortcuts chix strips)
- 1 pkg. Chi Chi Fiesta taco seasoning
- 2 cups frozen corn niblets
- 1 15oz. can chicken broth
- 1 15oz. can black beans *DO NOT DRAIN
- 1 15oz. can white beans *DO NOT DRAIN
- 1 can fat free refried beans (spicy or plain)
- 1 can diced Mexican style tomatoes w/ juice (ie. Rotel)
- 1 can diced tomatoes w/ juice
- 1 t cumin
Instructions
Spray medium size deep soup pot with non-stick spray
- Sautee onions until clear and softened.
- Add chicken breast and sautee until no longer pink. Add cumin.
- Start opening cans: begin with the broth, beans, refried beans, and add all other ingredients.
- Bring to a boilo then simmer for at least 40 minutes. Longer is fine. Add extra chicken broth if soup becomes too thick.
- Serve with warm soft (torn) tortillas or crispy tortilla chips.
